
Bob’s Coconut Chia Pudding
Recipe:
6 Tbsp chia seeds
1/8 tsp fine sea salt
1 can (14 oz/400 ml) coconut milk (full-fat)
1/3 cup water
3 tbsp liquid honey or maple syrup
1/2 tsp GF vanilla extract
Desired toppings
Instructions:
- In a small bowl, whisk together chia seeds, salt, coconut milk, water, honey and vanilla until blended. Cover and refrigerate for a least 4 hours, until thickened or for up to 5 days.
- Divide chia mixture among four bowls and top with any of the suggested toppings as desired.
Suggested Toppings
Fresh berries or chopped fruits (blueberries, raspberries, mango, apple)
Plain or toasted flaked or shredded coconut
Toasted nuts or seeds (hemp, sunflower, green pumpkin, sesame)
Dried fruit (raisins, cherries, cranberries)
