
Bob’s Cheese Crisp Crackers
Recipe:
1/2 cup Organic Brown Rice Flour
1/2 cup Organic Coconut Flour
1/4 tsp Sea Salt
1 Egg or Egg Replacer
1/4 cup Melted Butter or Vegan Butter
2 Tbsp Water
3 cups shredded Sharp Cheddar Cheese 12 oz or Vegan Cheese
1/4 cup Flaxseed optional
Large Flake Sea Salt for garnish
Instructions:
- Preheat oven to 300°F. Line a baking sheet with parchment paper.
- Place all ingredients (including flaxseeds, if using) except large flake sea salt in a food processor and blend until a dough forms, about 1 minute.
- Place dough on a floured work surface or between two pieces of parchment paper. Roll to about 1/8-inch thickness then cut into 1 1/2-inch squares. Sprinkle with large flake sea salt as desired.
- Transfer crackers to the prepared baking sheet. Bake until browned and crisp, 20-30 minutes, rotating halfway through. Let cool before serving. Store in an airtight container.
